One-Pan Sticky Chicken and 'Fried' Rice
Ingredients
  • ¼ cup light soy sauce
  • ¼ cup honey
  • 1 tsp lemon rind, finely grated
  • 2 tbsp lemon juice
  • 1 tsp sesame oil
  • 2 garlic cloves, crushed
  • 8 small chicken thigh cutlets (skin on), trimmed
  • 1 tbsp vegetable oil
  • 1 brown onion, cut into thin wedges
  • 2 celery stalks, finely chopped
  • 1 carrot, finely chopped
  • 2cm piece fresh ginger, finely grated
  • 2 ⅔ cups Massel chicken style liquid stock
  • 1 ⅓ cups jasmine rice
  • ½ cup frozen peas
  • 2 green onions, diagonally sliced
  • Fresh coriander sprigs, to serve
