Chickpea & Goat's Cheese Salad

Ingredients
  • 400g tin chickpeas
  • 200g cherry tomatoes, halved
  • 35g rocket
  • Red Pepper diced
  • Cucumber
  • 75g rouhgly chopped goat's cheese
  •  
  • subheading: For the dressing:
  • ½ tbsp extra virgin olive oil
  • ½ lemon, zest and juice
  • ½tsp dried oreganod
  •  
  • Alternative Dressing
  • Balsamic dressing
Steps
  1. Drain and rinse chickpeas and put in a large serving bowl with halved cherry tomatoes and rocket.
  2. Whisk together oil, lemon juice, lemon zest and oregano or use balsamic Dressing.
  3. Pour over the salad and toss to dress, then season to taste.
  4. Toss through roughly chopped goat's cheese
