Low Carb version of Mashed Potatoes. Just as delicious, some would say even more so...

Ingredients
  • 1 Head of Cauliflower Or equivalent bag of florets (not frozen)
  • 4 T. butter
  • ½ t. Sea Salt
  • ½ t. Pepper
Steps
  1. Cut the head of cauliflower into florets and place them in a steamer basket and steam until you can just pierce through with a sharp knife. Don't overcook or your mash will be watery.
  2. While still hot, place the florets into a Food Processor along with the butter and salt and pepper. If you need to do it in two batches, divide the butter and salt and pepper in half also. Process until smooth. Serve.
Notes
  • Cool completely before freezing. Freeze in freezer proof container - you may need to drain excess water off after thawing, but it won't interfere with the taste.
