Greek Lamb Baked in Clay Pots
The original recipe instructs to cover the clay pot with dough to cook and seal the ingredients inside. Instead of dough, I'll use foil or the clay pot's cover.
Ingredients
  • 1 cup flour
  • ¼ cup water
  • ¼ teaspoon salt
  • ¼ teaspoon sugar
  • Meat Filling
  • 2 ½ lbs lamb (cut into 1 ½ inch chunks)
  • 12 small whole onions (peeled)
  • 6 medium potatoes (peeled and quartered)
  • 2 stalks celery (cut into ¼ inch pieces)
  • 4 to 5 pickled jalapeno peppers (seeded and chopped)
  • 3 garlic cloves (minced)
  • ½ cup fresh parsley (chopped)
  • ⅓ cup fresh dill (chopped)
  • 3 tablespoons fresh lemon juice
  • 6 tablespoons extra virgin olive oil
  • 1 tablespoon dried thyme
  • 2 teaspoons dried rosemary
  • ½ teaspoon dried sage
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • ½ lb feta cheese (crumbled)
