Pumpkin Soup

Ingredients
  • 2 c baked pumpkin or organic canned pumpkin
  • 1 c full fat coconut milk
  • 4 c bone or chicken broth
  • 2 tsp fresh thyme, minced
  • ½ tsp fresh nutmeg, grated
  • 1 tsp paprika or cayenne
Steps
  1. In a medium saucepan, combine all ingredients.
  2. Bring to a simmer and serve.
  3. If it is too thick, add additional broth until it reaches the desired consistency.
