Texan Tamale Pie with Black Beans and Sweet Potato
Ingredients

  • 1 cup finely ground cornmeal
  • ½ cup masa harina
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup canola oil
  • 1 cup water
  • 1 ½ cups fresh or frozen corn kernels, coarsely chopped
  • ½ cup fresh cilantro leaves, chopped
