Turkey & Vegetable Scramble
loading...
Incredibly easy, moderately healthy dinner that is apparently paleo.
Servings: 2
Servings: 2
Ingredients
- 1 lb ground turkey (85/15% lean/fat)
- 1 medium onion, chopped
- 2 large carrots, chopped
- 1 bunch radishes, chopped
- 2 tsp. tomato paste
- subheading: Seasoning (or just use pre-mixed taco seasoning if you prefer):
- 2½ tsp. chili powder
- 1½ tsp. cumin
- ½ tsp. paprika
- ½ tsp. oregano
- ½ tsp. garlic powder
- ½ tsp. salt (I usually add more later)
- ¼ tsp. onion powder
- ¼ tsp. cayenne
- ¼ tsp. black pepper
Steps
- Prep: Mix your dry seasonings and chop your vegetables.
- Start the turkey in a large pan (with a lid) over medium-high heat. No need for oil if you're using 85/15 meat. Move it around to break it up as it cooks, going about three minutes.
- Add tomato paste and half your seasoning mix, stirring thoroughly. Cover, lower the heat to medium and continue cooking another few minutes.
- Add all your vegetables and stir to combine. Cover and cook five minutes, stirring if needed.
- Mix in the remaining seasoning, re-cover and cook another fifteen minutes, stirring occasionally. It'll be ready when the carrots are done.
- Serve hot.
