Turkey & Vegetable Scramble
Incredibly easy, moderately healthy dinner that is apparently paleo.

Ingredients
  • 1 lb ground turkey (85/15% lean/fat)
  • 1 medium onion, chopped
  • 2 large carrots, chopped
  • 1 bunch radishes, chopped
  • 2 tsp. tomato paste
  • subheading: Seasoning (or just use pre-mixed taco seasoning if you prefer):
  • 2½ tsp. chili powder
  • 1½ tsp. cumin
  • ½ tsp. paprika
  • ½ tsp. oregano
  • ½ tsp. garlic powder
  • ½ tsp. salt (I usually add more later)
  • ¼ tsp. onion powder
  • ¼ tsp. cayenne
  • ¼ tsp. black pepper
Steps
  1. Prep: Mix your dry seasonings and chop your vegetables.
  2. Start the turkey in a large pan (with a lid) over medium-high heat. No need for oil if you're using 85/15 meat. Move it around to break it up as it cooks, going about three minutes.
  3. Add tomato paste and half your seasoning mix, stirring thoroughly. Cover, lower the heat to medium and continue cooking another few minutes.
  4. Add all your vegetables and stir to combine. Cover and cook five minutes, stirring if needed.
  5. Mix in the remaining seasoning, re-cover and cook another fifteen minutes, stirring occasionally. It'll be ready when the carrots are done.
  6. Serve hot.
