Ingredients
  • makes 6 servings     total prep time 15 min.    total cooking time 6 to 8 hrs.
  • 1 pkg, 15 oz., firm tofu cubed
  • 1 clove garlic minced
  • zest and juice of 1 lime
  • 3 Tbsp salsa
  • ½ tsp chili powder
  • ¼ tsp chipotle powder or smoked paprika
  • ¼ tsp cumin
  • hot pepper to taste
  • salt to taste
  • 6 hard corn tortilla taco shells, warmed for serving
  •  
  • the night before;
  • combine the cubed tofu, minced garlic and zest and lime juice in an airtight container in the fridge.
  • in the morning;
  • oil the crock of your slow cooker.  add all the ingredients and cook on LOW for 6 to 8 hours.  taste and adjust the seasonings.  serve in warmed corn tortilla shells.
