Ingredients
- Chili
- 2lb ground beef
- 1 small onion minced
- 1 large green pepper chopped
- 2 stalks of celery chopped
- 2 15oz cans of kidney beans (separated)
- 1 28oz can diced tomatoes
- 1 8oz can tomato sauce
- ½ cup of water/beef broth
- Half of spice mix
- Spice mix (enough for 2 meals)
- 5 tbsp chili powder
- 1 tbsp ground coriander
- 1 tbsp ground cumin
- 1 tbsp garlic powder
- 1 tsp oregano
- 2 tsp cayenne pepper
Steps
- Preparation
- Puree 1 can of kidney beans(drained and rinsed). Drizzle some of the water/beef broth if needed to smoothen.
- Make chili.
- Saute ground beef until browned.
- Add onion, celery, green pepper and half of the spice mix. Mix well and simmer on saute for a few minutes.
- Add remaining water/beef broth. Deglaze pot.
- Add pureed kidney beans. Do not stir.
- Add 2nd can of kidney beans whole(drained and rinsed). Do not stir.
- Add full can of diced tomatoes (undrained). Do not stir.
- Add can of tomato sauce. Do not stir.
- Set on manual/pressure Cook for 20 minutes on high pressure.
- Allow a 10 minute NPR. Release any remaining pressure.
- Stir all ingredients together.
- If needed, put on saute to thicken. It will thicken as it sits also.
Notes
- Spice mix ingredients list makes a lot more than needed for recipe. Just store remaining mix for next time.
- I usually let sit for 10 minutes to thicken.
