Slow Cooker Thai Green Curry Chicken
Ingredients
  • 20 oz. canned light coconut milk
  • 3 tbsp green curry paste
  • 3 tbsp brown sugar (or Stevia, honey, agave)
  • 4 garlic cloves, minced
  • 2 ½ lb boneless skinless chicken breast, cut into chunks
  • 3 cups Asian vegetable stirfry mix (or your own)
  • 1 cup canned baby corn, drained
  • 1 red onion, sliced
  • 2 tbsp cornstarch (or arrowroot)
