Tortellini alla panna
Great recipe from Kay and Owen Martin in Gaeta, Italy when I visited there in January of 1983

Ingredients
  • 8 Oz of tortellini
  • ¼ cup of water (or margarine) in separate pan
  • ⅔ to 1 cup of chopped ham
  • 1 small onion chopped (optional)
  • 1 16 Oz package of Sterilgarda Italian UHT Cooking Cream (order from Amazon)
  • ½ cup of fresh, grated parmesan cheese (can use finely shredded)
Steps
  1. 1. Bring tortellini to a boil, drain and set aside
  2. 2. Melt the butter or margarine
  3. 3. In a separate large frying pan, add ham and onion (if you choose) and sauté
  4. 3. Add cooking cream and heat through, without boiling
  5. 4. Add the parmesan cheese and stir well
  6. 5. Add the tortellini gently folding into the cooking cream and ham
  7. 6. Serve hot
Notes
  • Extra parmesan cheese may be sprinkled atop each service as a delish garnich
