Great recipe from Kay and Owen Martin in Gaeta, Italy when I visited there in January of 1983

Ingredients
- 8 Oz of tortellini
- ¼ cup of water (or margarine) in separate pan
- ⅔ to 1 cup of chopped ham
- 1 small onion chopped (optional)
- 1 16 Oz package of Sterilgarda Italian UHT Cooking Cream (order from Amazon)
- ½ cup of fresh, grated parmesan cheese (can use finely shredded)
Steps
- 1. Bring tortellini to a boil, drain and set aside
- 2. Melt the butter or margarine
- 3. In a separate large frying pan, add ham and onion (if you choose) and sauté
- 3. Add cooking cream and heat through, without boiling
- 4. Add the parmesan cheese and stir well
- 5. Add the tortellini gently folding into the cooking cream and ham
- 6. Serve hot
Notes
- Extra parmesan cheese may be sprinkled atop each service as a delish garnich
