Sam Sifton's Crab Cakes
Ingredients
  • 1 large egg, lightly beaten
  • ½ cup mayonnaise
  • 1 Tbsp. Dijon mustard
  • 1 Tbsp. Worcestershire sauce
  • ½ tsp. kosher salt
  • ½ tsp. hot sauce (such as Crystal)
  • 1 cup finely crushed unsalted saltine crackers (about 20 crackers)
  • 1 lb. fresh lump crabmeat, drained and picked over for shells
  • ¼ cup canola or grapeseed oil
