Traditional Bone-In Pot Roast
Ingredients

  • 3 to 4 pound Bone-in chuck roast

  • 2 dried bay leaves

  • 1½ lbs small whole yellow waxy potatoes
  • 1½ lbs carrots, peeled and cut into large chunks
  • 2 medium yellow onions, peeled and quartered
  • 10 sprigs fresh thyme
  • 3 tablespoons chopped fresh flat-leaf Italian Parsley

  • braising liquid
  • 1 tablespoon butter, unsalted
  • 1 tablespoon all-purpose flour
