Sweet Potato and Black Bean Enchiladas
Ingredients
  • 1 batch brown rice (2 cups cooked)
  • 1 batch homemade red enchilada sauce*
  • 2 small/medium sweet potatoes, peeled and chopped into small pieces
  • 2 Tbsp olive oil
  • salt and pepper
  • 1 tsp garlic, minced
  • 1 large bell pepper, diced (any color you like)
  • 1 can black beans, rinsed and drained
  • 10 to 12 large white or whole wheat flour tortillas
  • 2 cups cheddar cheese, divided
  • Chopped fresh cilantro, for topping
  • 1 avocado, peeled, seeded and chopped, for topping
