Zucchini Chickpea Curry Meal Prep
Ingredients

  • ¼ cup broth or coconut milk (optional)

  • 1 cup dry basmati rice
  • 2 tablespoons coconut oil
  • 1 cinnamon stick (optional)
  • 4 cardamom pods (optional), lightly bashed to reveal their seeds
  • ¼ teaspoon ground turmeric
  • ¼ teaspoon kosher salt
