Broccolini Parmesan Soup
Ingredients

  • Two (15-ounce) cans cannellini beans, preferably no-salt-added, drained and rinsed
  • 4 cups low-sodium vegetable broth
  • 1 parmesan rind (optional)
  • ½ cup heavy cream (optional)
  • 1 packed cup (4 ounces) grated parmesan cheese, plus more for serving
