Crab Cannelloni with Tomato Sauce
Ingredients
  • 18 dried cannelloni tubes
  • 1 lb fresh white crabmeat or 2 x 7 oz tins crabmeat
  • 8 oz frozen spinach
  • 3 tablespoons chopped fresh basil or 1 teaspoon dried
  • Salt and freshly ground black pepper
  • 3 oz fresh Parmesan
  • Sprigs of thyme parsley or basil for garnish
  • subheading: for the tomato sauce:
  • 1 medium onion
  • 1 large carrot
  • 1 medium stick celery
  • 4 cloves garlic
  • 1 tablespoon virgin olive oil
  • 42 oz tinned plum tomatoes
  • 6 tablespoons dry white wine
  • 4 teaspoons sugar
  • 2 bay leaves
  • 1 teaspoon each chopped fresh thyme parsley and basil, or ½ teaspoon each dried
  • 2 level teaspoons salt
  • Freshly ground black pepper
