Pad Kee Mao (Drunken Noodles)
Ingredients

  • 2 bird's eye chillies, deseeded and very finely diced
  • 1 onion, sliced
  • 200 g chicken thighs, cut into bitesize pieces
  • 2 tsp. fish sauce
  • 200 g wide rice noodles
  • 2 spring onions, cut into2-inch pieces
  • 1 small bunch Thai basil, leaves picked (about 20g)
