Ingredients
- Brine
- 500ml Apple Juice
- 150ml Soy Sauce
- ½ cup non-iodized salt
- ½ cup brown sugar
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp cayenne powder
- ½ tsp dried bay leaf flakes
- 1½ litres water and ice
Steps
- Bring apple juice to a slow simmer and then add the soy sauce and dry brine ingredients.
- Stir to allow salt to dissolve and then add water and ice to cool quickly.
- Leave whole fish in this brine for 12 hours, or fish fillets for 6 hours.
- Remove fish from brine and pat dry and lay on paper towels.
