Smoked Fish
Ingredients
  • Brine
  • 500ml Apple Juice
  • 150ml Soy Sauce
  • ½ cup non-iodized salt
  • ½ cup brown sugar
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp cayenne powder
  • ½ tsp dried bay leaf flakes
  • 1½ litres water and ice
Steps
  1. Bring apple juice to a slow simmer and then add the soy sauce and dry brine ingredients.
  2. Stir to allow salt to dissolve and then add water and ice to cool quickly.
  3. Leave whole fish in this brine for 12 hours, or fish fillets for 6 hours.
  4. Remove fish from brine and pat dry and lay on paper towels.
