Sabzi Polo Bah Mahi with a French Twist
Ingredients
  • Sabzi Polo
  • 2 c basmati rice
  • 1 ½ c dill, finely chopped
  • 1 ½ c parsley, finely chopped
  • 1 ½ c cilantro, finely chopped
  • 6 scallions, finely chopped
  • 1 tsp saffron, crushed and brewed in ½ c ice
  • ½ tsp turmeric
  • ½ c oil
  • Salt
  • 7 garlic cloves
  • 2 potatoes of choice, thinly sliced
  •  
  • Fish Cooked Inside a Salt Crust
  • 2 pound whole fish, such as bass, snapper, trout, or branzino, scaled and gutted
  • Lemon slices, peeled garlic cloves, and/or fresh herb sprigs (such as parsley, dill, oregano, thyme, or tarragon), for stuffing
  • 2 pounds kosher salt
  • ¾ c water
  • Extra virgin olive oil, for brushing and drizzling
  •  
  • Saffron Beurre Blanc
  • 1 pound cold unsalted butter
  • 1 ½ cup dry white wine
  • 1 tablespoon finely chopped shallot
  • Kosher salt, to taste
  • 1 tsp saffron
