Mommy's Hot Potato Salad
Ingredients
  • Potatoes (I usually do a potato for each person and one for the pot)
  • sour cream
  • Bacon
  • Onions
  • Salt and pepper
Steps
  1. Cook potatoes whole (I leave skins on as that is where the vitamins and minerals are). Cook till nearly tender in salted water. Don't cook all the way as the potatoes will cook more in the onion-back mixture.   While potatoes are cooking brown several pieces of bacon. Set aside on paper towels to drain.  Save bacon grease in the fry pan.  Add a whole onion or two to taste to the hot bacon grease. Cook till translucent. At this point add the potatoes that have been diced into bit size pieces or sliced.  Crumble cook bacon into mixture. Stir. Cook a few minutes. Just before serving add sour cream and cook until sour cream is warmed up. Until takes a couple of minutes or so.
