Ingredients
  • 3 lbs potatoes , washed and cut up into bite-size chunks (skin on)
  • 1 package kielbasa, cut into rounds
  • 1 onion, sliced
  • Several cloves of garlic, sliced
  • 3 TBSP grapeseed, vegetable, or avocado oil (olive oil will burn at this temp)
  • Salt and pepper to taste
Steps
  1. Preheat oven to 425°F.
  2. Combine all ingredients, except salt and pepper, in a large bowl.
  3. Toss to coat all evenly with oil.
  4. Spread evenly on baking pan, lined if you prefer.
  5. Sprinkle generously with salt and pepper.
  6. Roast 30 to 45 min, until deliciously golden brown. Potatoes should be soft internally and a little crispy.
Notes
  • Can replace 1 lb potatoes with sweet potatoes
