Coconut Rice
AJ’s mom’s Panamanian coconut rice
Ingredients
  • Long-grain rice
  • 1 can coconut milk
  • Water
Steps
  1. Put 1 can coconut milk in a pot. Fill that empty can up with long grain rice and add it to the pot. Fill the empty can with water about ½ to ¾ full and swish to get the leftover bits of rice and then put all that in the pot. Add some salt to taste.
  2. Stir it all up and bring the whole thing to a boil. Cover and turn way down low. Simmer for 40 minutes.
