High Protein Pasta Salad
Ingredients

  • 2 servings protein pasta like chickpea pasta. You could also use regular pasta. Rinse in cold water and draine
  • 1 large cucumber seeded (or 3 mini cucumbers)
  • ½ red onion diced
  • 2 bell peppers diced
  • 1.5 cups edamame peeled
  • ⅓ cup black olives sliced
  • salt & pepper
  • Basil or dill or parsley, add based on preference

  • 1 tbsp olive oil or avocado oil
  • 1 tbsp maple syrup or agave nectar
  • 2 tbsp dijon mustard
  • 2 tbsp red wine vinegar
  • 1 tbsp Italian seasoning
