Red beans and Rice
Ingredients
  • 3 cans of Kidney or red beans
  • 2 cups of long grain white rice
  • ½ TSP cumin
  • 1 TSP salt
  • ¼ TSP black pepper
  • 1 green bell pepper chopped
  • 1 onion chopped
  • 1 Kielbasa (optional) Hillshire Farms has a great turkey Kielbasa for ~$2 at my local store
Steps
  1. Cook onion and peppers in oil for ~5 minutes, until transparent.
  2. Rinse beans in cold water and add to slow cooker.
  3. Combine and mix all ingredients (except rice) into slow cooker and cook on low for 5 to 6 hours.
  4. Serve over hot rice, I also use hot sauce to taste. I prefer Goya brand, but that is up to you. I usually add some biscuits (like Great Grands) as a side.
