Ricotta Christmas Cookies
Ingredients
  • 2 cup’s Ricotta
  • Lemon zest, about ¾ of a lemon
  • 3 tsp vanilla extract
  • 1 cup of butter semi melted.
  • 2 eggs
  • 4 cups of flour
  • 2 cups of sugar
  • 2 tsp baking soda
  • ½ tsp salt
  • I place all ingredients into cake mixer. But I whisk the eggs before I add them then mix well on med speed. Then cover and put batter in fridge for an hour or so. Then make by hand a small dough ball, like a meatball size and bake on 350 for about 15 min. Cool on rack and dip in icing sugar batter and put sprinkles if you like. Then put back on rack to dry. About half an hour and enjoy. Can be frozen if you’d like to store.
