  • 1 cup beef or chicken stock
  • 3 whole star anise
  • 2 bay leaves
  • 3 sprigs of thyme
  • 2 sprigs of rosmary
  • 2 dried red chillies
  • 3 tbsp soy sauce
  • 2 tsp sugar
  • ½ cup cream
  • finely grated zest of 1 lemon
  • ½ tsp ground white pepper
  • 600g (1.3 lb) dried spaghetti
  • 4 tbsp finely grated parmesan cheese, plus extra to serve
  • fresh basil leaves to serve (optional)
  • sea salt
