Lemony Mushroom Quinoa
Ingredients
  • 1 cup quinoa
  • 2 cups low sodium or no salt added vegetable broth
  • 1 pound mushrooms, chopped
  • 2 cloves garlic, finely chopped
  • 4 green onions, white and light green parts, finely sliced
  • ¼ cup chopped fresh parsley
  • 2 tablespoons chopped fresh chives
  • 1 fresh lemon, juiced and zested
  • ¼ cup white balsamic vinegar
  • ½ teaspoon freshly ground black pepper or to taste
