Pear Shortbread
Ingredients
  • subheading: Almond shortbread:
  • 4 tbsp butter
  • ¼ cup sweetener
  • 1 cup almond flour
  • subheading: Pear compote:
  • 2 pears, cored & cubed
  • 2 tbsp Lemon peel
  • Dash of ground cardamom
  • Dash of ground ginger
  • Dash of ground cinnamon
  • 2 tbsp chia seeds
Steps
  1. Preheat oven to 350°F. Line 8" square baking pan with parchment.
  2. Melt butter in small bowl and mix in sweetener and almond flour thoroughly.  Spread in lined baking pan. Bake 15 minutes.
  3. Meanwhile, combine pears and spices in medium saucepan over medium heat. Cook until saucy, then mix in chia seeds. Remove from heat.
  4. Allow almond shortbread to cool well before topping with pear compote.
