  • 4 tablespoons (56g) unsalted butter
  • 1 tablespoon minced, peeled fresh ginger
  • 6 garlic cloves, minced (about 2 tablespoons)
  • one 6-ounce (170g) can tomato paste
  • 2 cups (480ml) heavy cream
  • 1 cup (227g) sour cream
  • 1 ½ cups (170g) gouda cheese, coarsely grated (plus more for sprinkling on top, optional)
  • 1 ½ cups (170g) cheddar cheese, coarsely grated
  • ¼ cup kosher salt, divided
  • 1 pound (453g) uncooked elbow macaroni, shells, or other small shape
