These muffins were created as an homage to a dear friend and one of the smartest people I know, Dr. Doug Lisle, who along with Dr. Goldhamer and Dr. McDougall is responsible for teaching me how to become a skinny bitch! He presented some groundbreaking information on bingeing and night eating at the LIVE Vegas Ultimate Weight Loss conference in Las Vegas, which he called the Cram Circuit. If people were going to eat at night, I wanted to create something that would be satisfying and wouldn’t derail their weight loss effort. And since his favorite dessert is carrot cake, I thought these would help folks who cave to the crave without feeling guilty.
