Quick and Easy Pressure Cooker Black Beans with Chorizo
Made this tonight for dinner - A few notes:

Changes to recipe I made: Omit chorizo, used half lime instead of half orange. Added spices (cumin, chili powder, cayenne pepper, S&P)

2 qts liquid is too much. Try 1.5-1.75 and you'll end up with a better stew (more like the photo)

40 minutes is WAYYY too long. I used my stainless steel Presto 6Qt model with weighted pressure regulator. Brought up to boil and let go 33 minutes. Beans are mushy. Hip Pressure Cooking time table says unsoaked black beans take 22 minutes. I'd try 22-25 minutes next time

Ingredients
  • 1 tablespoon vegetable oil
  • 6 ounces Spanish-style chorizo, split in half lengthwise and cut into ΒΌ-inch half moons (see note above)
  • 1 pound dried black beans
  • 1 whole onion, split in half
  • 6 whole garlic cloves
  • 1 orange, split in half
  • 2 bay leaves
  • 2 quarts homemade or store-bought low-sodium chicken stock
  • 2 teaspoons kosher salt, plus more for seasoning
  • Chopped fresh cilantro, for serving
