Chips
posh oven chips - lowering the carbs by locking in residual carbs.

Servings: 2 to 6 depending upon how many potatoes you use.

Ingredients
  • Potatoes - Preferably King Edward or Maris Piper
Steps
  1. Cut the potatoes into chips.
  2. Cook in salted boiling water until almost done.
  3. Drain, and spread them out on kitchen paper on a tray then place in the fridge overnight.
  4. When you’re ready, put the oven to at least 220C/gas mark 7 and put an oven tray in there with close to a centimetre of vegetable oil for about 15 minutes until it’s smoking.
  5. Introduce fridge cold chips to very hot oil.
  6. Turn them every 10 minutes until chip heaven is achieved. It should take about 45 minutes. Drain on kitchen paper.
  7. Sprinkle with sea salt.
  8. Eat them
