Ingredients
  • 1pound (2 cups) dried small red beans
  • 2 Bay leaves
  • 1 table spoon New Mexico chili powder
  • 1 teaspoon ground black pepper
  • 1 teaspoon onion powder
  • ½ teaspoon garlic powder
  • Salt as needed
  • 4 cups broth or water
Steps
  1. Sort and rinse beans in cold water
  2. Place in a medium pot with water
  3. Add spices except salt
  4. Bring to a high boil and then turn to simmer
  5. Check after each ½ hour and add more hot water if needed
  6. Cook until just tender and add salt
  7. Continue cooking until tender to taste
Notes
  • You may add some bacon if you like.
