30 Minute Spicy Miso Chicken Katsu Ramen
Ingredients
  • 2stripsthick-cut bacon, chopped
  • 6clovesgarlic, finely chopped or grated
  • 2medium shallots, finely chopped
  • 1inchfresh ginger, thinly sliced
  • ½ to 1teaspoonred pepper flakes
  • 8cupslow sodium chicken broth
  • ¾cupcoconut milk (or preferred milk)
  • ¼cuplow sodium soy sauce
  • ¼cupwhite miso paste
  • 2 to 4tablespoonschili paste, to taste(I use Gochujang)
  • 4squares ramen noodles
  • 4cupsbaby spinach, chopped
  • 1tablespoontoasted sesame oil
  • soft or hard boiled eggs, for serving
  • Toasted nori sheets, sesame seeds, green onions, and chili oil, for serving

  • 4chicken cutlets, or 2 boneless chicken breasts, sliced in half horizontally
  • 1cupPanko
  • 3tablespoonssesame seeds
  • kosher salt
