Basque Vegetable Soup
Ingredients
  • 2 quarts of water
  • 1 beef bone
  • 3 tbsp. of tomato paste
  • ½ of a 15-oz. can of whole tomatoes
  • ½ head of cabbage
  • 1 leek, white part only
  • 4 carrots
  • 2 stalks of celery
  • 2 potatoes
  • Salt, pepper to taste
  • A pinch of cayenne
  • 1 tbsp. chopped parsley
  • 2 to 3 cloves of garlic, chopped
  • ½ tbsp. dried thyme
  • ½ can (drained) of pinto beans or more (optional)
