Potato Masala or Aloo Masala for Dosa (Restaurant Style)
Ingredients

  • 1 medium onions chopped or sliced (about ½ to ¾ cup)
  • ½ tbsp ginger chopped or grated (about 1 inch)
  • 1 sprig curry leaves
  • ¼ to ½ tsp mustard
  • ½ tsp cumin
  • 1 tsp chana dal
  • 1 tsp urad dal
  • 1 to 2 green chilies chopped or sliced
  • 2 tbsps coriander leaves chopped finely
  • ⅛ tsp turmeric (use more if needed)
  • 1 Pinch hing (optional)
  • Salt as needed
  • 2 tbsp oil
