1 ½ cups sifted superfine sugar

1 teaspoon pure vanilla extract

10 ½ ounces bittersweet chocolate, finely chopped

½ cup plus 1 tablespoon heavy cream

6 tablespoons sugar

2 tablespoons unsalted butter
