One Pot Cheesy Zucchini Chicken & Rice
Ingredients
  • 3 to 4 tablespoons olive oil
  • 1 lb boneless, skinless chicken breasts or chicken thighs cut into bite-sized pieces
  • 1 large white or yellow onion, diced
  • 3 cloves garlic, minced
  • 2 medium zucchini, diced
  • 2 teaspoons dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 teaspoon salt
  • ½ teaspoon dried chili flakes
  • 1 cup uncooked basmati rice (200g)
  • 2 cups chicken stock (480g)
  • 2 tablespoons lemon juice (30 ml)
  • 2 cups grated cheddar cheese or cheese of your choice (220g)
  • Fresh parsley and/or chives for topping (optional)
