Asian Quinoa Slaw Salad with Sesame Ginger Vinaigrette
Ingredients

  • 6 cups Red or Green Cabbage (1 lb shredded)
  • 1 cup Quinoa (cooked)
  • 1 cup Carrots or ¼ lb. (shredded)
  • ¼ cup fresh Cilantro (chopped)
  • ⅓ cup Cashews (chopped, toasted)
  • 1 Tbsp Black Sesame Seeds (toasted)
  • 2 Green Onions (sliced, keep green and white separated)
  • subheading: For the Sesame Ginger Vinaigrette:
  • ¼ cup Rice Vinegar
  • 1 tsp fresh Ginger (finely grated)
  • 1 clove Garlic (finely grated)
  • 1 Tbsp Agave Nectar
  • pinch of Salt and Pepper
  • ¼ cup Olive Oil
  • 2 Tbsp Sesame Oil (golden or dark is fine)
