Roasted Cauliflower Mac and Cheese
  • Cheese sauce
  • 60g butter
  • 50g all-purpose flour
  • 750ml milk
  • 1 teaspoon Dijon mustard
  • ½ teaspoon salt
  • 1½ cups mature cheddar, grated
  • Roasted cauliflower
  • 1 head cauliflower, broken into small florets
  • 2 tablespoons olive oil
  • salt and pepper, to taste
  • Parmesan and walnut crumb topping
  • 2 cups fresh breadcrumbs (day old ciabatta or boerebrood-style white is best)
  • 3 tablespoons melted butter
  • ¼ cup roughly chopped walnuts (optional)
  • ½ cup finely grated parmesan cheese
  • handful fresh thyme sprigs or ¼ teaspoon dried oregano
  • salt and freshly ground black pepper
  • 350g macaroni pasta, cooked and drained
