Healthy Slow Cooker Yellow Chicken Curry
Ingredients
  • 1 (15 ounce) can lite coconut milk
  • ¼ cup chicken broth (or water)
  • 2 tablespoons natural creamy peanut butter (or cashew butter)
  • 1 tablespoon gluten free soy sauce (or coconut aminos)
  • 3 cloves garlic, minced
  • 1 tablespoon of freshly grated ginger
  • 1 tablespoon yellow curry powder (or regular curry powder)
  • ½ teaspoon ground turmeric
  • ¼ teaspoon cayenne pepper
  • Freshly ground black pepper
  • ½ teaspoon salt
  • 1 pound boneless skinless chicken breast
  • 2 medium sweet potatoes, cut into ½ inch cubes (about 2 ½ cups cubed sweet potato)
  • 2 medium carrots, sliced
  • 1 yellow onion, diced
  • 1 red bell pepper, julienned
  • 1 cup frozen peas
