Low Cal Pumpkin Pie

Ingredients
  • 1 can of pure pumpkin (14 ounces) (144 calories)
  • ½ cup of truvia sweetener (0 calories)
  • ½ cup of coconut milk (40 calories)
  • 2 egg whites (34 calories)
  • 2 tsp of pumpkin pie spice (0 calories)
  • 10 tbsp of fat free cool whip (84 calories)
  • Cooking spray (20 calories)
Steps
  1. Preheat oven to 350 degrees.
  2. Prepare 8 or 9 inch pie dish by spraying it with cooking spray.
  3. Combine the pumpkin, egg whites, pumpkin pie spice, coconut milk, and truvia sweetener in a large bowl and mix thoroughly.
  4. Put mixture into prepared pan then bake for 50 to 60 minutes until firm. Then chill for 2 to 3 hours in the fridge or 30 mins in the freezer.
  5. Remove from fridge/freezer and top with cool whip. Serve and enjoy!
