Hearty Instant Pot Butternut Squash Soup
Ingredients
  • 1 ½ pounds roasted butternut squash (peeled and cubed)*
  • 3 tablespoons butter
  • ½ cup green onions, diced, plus more sliced very thin for garnish
  • ½ cup celery, diced
  • ½ cup carrots, diced
  • 1 clove garlic, minced
  • 2 cans (14.5 ounces, each) reduced-sodium chicken broth
  • 1 can (14.5 ounces, each) diced tomatoes with juice
  • ½ teaspoon Italian seasoning
  • ⅛ teaspoon dried red pepper flakes
  • ¼ teaspoon ground black pepper
  • ⅛ teaspoon freshly grated nutmeg**
  • 1 cup orzo, cooked
  • 1 cup chicken, cooked and diced (I use rotisserie chicken or leftover grilled chicken)
  • ½ cup half-and-half, plus more for serving
