Shrimp and Spinach in Saffron Cream
Ingredients

  • 1 pound spinach leaves-washed thoroughly but not dried
  • 1 tablespoon unsalted butter
  • 1 pound medium shrimp, shelled and deveined
  • Salt and freshly ground pepper
  • 1 tablespoon olive oil
  • 2 large shallots, minced
  • 1 large garlic clove, minced
  • ⅔ cup heavy cream
  • 2 tablespoons shrimp stock or water
  • 1 medium tomato or large plum tomato, seeded and cut into ½ -inch dice
  • 2 teaspoons fresh lemon juice
