Chili con carne
1 serving is WW smartpoints
Ingredients
  • 2 lbs of lean ground beef (may use turkey or chicken)
  • 1 cup diced green bell pepper
  • 6 cloves of garlic, minced
  • Salt to taste
  • 2 TBS olive oil
  • ¼ tsp black pepper
  • 3 TBS Cumin
  • 1 ½ TBS Chili Powder
  • 28 oz. canned diced tomatoes- no added sugar
  • 7 oz canned mild green chiles
  • 1 cup sliced fresh mushrooms
Steps
  1. Heat a large skillet on medium high heat; add olive oil, garlic, mushrooms and green pepper.
  2. Stir fry until lightly brown, add ground beef; brown and drain any fat.
  3. Add remaining ingredients, turn down heat and simmer for about 20 minutes.
Notes
  • Can serve with corn chips, over rice, can add beans if desired.
