  • ½ brown onion, chopped
  • 250g Italian-style sausages
  • 1½ garlic cloves, crushed
  • 100g cup mushrooms, thickly sliced
  • 2 Portobello mushrooms, halved, thickly sliced
  • ½ cup + 6 tbsp arborio rice
  • 2 tbsp + 2 teaspoons dry white wine
  • 500ml salt reduced Chicken Stock
  • 40g baby spinach
  • ½ cup finely grated parmesan
  • 1 tbsp chopped fresh flat-leaf parsley leaves
  • parsley leaves, to serve
