Tofu and Cauliflower Fried Rice
Ingredients
  • 2 tbsp peanut oil (or vegetable oil of your choice)
  • 1 tbsp sesame oil
  • 2 garlic cloves
  • 3 cups cauliflower florets, cut small
  • ½ cup frozen peas, thawed
  • ½ a red capsicum, finely chopped
  • 250g soft tofu
  • 2 cups cold cooked rice
  • 2 tsp ground turmeric
  • 2 tsp curry powder
  • ½ to 1 tsp chilli flakes (optional)
  • ½ to 1 tsp salt, to taste
  • 2 spring onions (scallions), thinly sliced (whites and greens)
  • Large handful coriander (cilantro), finely chopped
  • 1 to 2 fresh limes, for squeezing
