Chia Pudding with Coconut Milk and Berries
Ingredients
  • 1 cup unsweetened coconut milk (the lower-fat refrigerated kind, such as Silk - not canned)
  • ¼ cup chia seeds
  • 1 tablespoon pure maple syrup
  • 1 tablespoon sugar
  • ½ teaspoon vanilla
  • ¼ cup blackberry jelly or preserves (preferably 100% pure fruit, such as Smucker's Simply Fruit)
  • 1 cup fruit (blueberries, sliced strawberries and sliced bananas - see note)
  • ¼ cup granola (such as Cascadian Farm Oats & Honey)
