Gluten Free Chocolate Sponge Cake
Ingredients
  • 1 cup granulated sugar
  • 4 large eggs at room temperature, separated (or ¼ butter or fat of some kind + ½ cup liquid from a can of cannellini beans)
  • ¼ cup + 1 tablespoon boiling water
  • 1 teaspoon pure vanilla extract
  • ¾ cup + 2 tablespoons Gluten Free Self-Rising Cake Flour Blend see above recipe link
  • ¼ cup Dutch-processed cocoa powder (or unsweetened cocoa powder)
  • 1/16 teaspoon salt
